Authentic Greek Salad

  • 4 large ripe tomatoes, cut into wedges

Instructions

  1. Wash and prepare all the vegetables.

  2. Place the tomatoes, cucumber, red onion, and green bell pepper in a large salad bowl.

  3. Add the Kalamata olives and gently toss the vegetables.

  4. Place the block of feta cheese on top of the salad rather than crumbling it.

  5. Drizzle the extra virgin olive oil evenly over the salad.

  6. Sprinkle the dried oregano over the feta and vegetables.

  7. Season lightly with sea salt, keeping in mind that the feta and olives are already salty.

  8. Serve immediately with crusty bread.

Traditional Greek Tip

An authentic Greek village salad (Horiatiki) does not contain lettuce, vinegar, or lemon juice. The simplicity of fresh vegetables, quality feta, olives, oregano, and extra virgin olive oil is what makes it truly authentic.

Instructions

  1. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper until well combined.

  2. Place the mixed greens in a large serving bowl.

  3. Add the cucumber, cherry tomatoes, red onion, and avocado.

  4. Arrange the smoked salmon slices on top of the salad.

  5. Sprinkle with capers and fresh dill.

  6. Drizzle the dressing over the salad just before serving.

  7. Gently toss or serve as is for a beautiful presentation.

  • For extra protein, add a boiled egg.

  • For a Mediterranean twist, add crumbled feta cheese.
